Be My Guest – Pomegranate Ice-Cream


The fourth guest of the year! Days are moving fast and the climate is changing as well. From winter (was there one this year???), we slowly move towards higher temperatures. It is already hot in the afternoons, so slowly that trend would spread out to the whole day. Standing in the kitchen to make dinner is itself becoming a cumbersome task! So what better time could my dear blogger friend bring in a delicious ice-cream as the guest post?

 

Today, I have with Remya, who blogs at Remya’s Baking and Cooking. I must say she is a fantastic baker, or rather a daring one. She tries so many types of varieties, that you would want to dash into your kitchen and start baking right away. Do check out her baking varieties to feel mesmerized! I have particularly eyed the Cheesecake Bodino to try at the earliest, but then it is somewhere in that long list of bookmarks, so I don’t know when the opportunity will come! Personally, if you ask me, I have found her to be a down-to-earth, very humble person. Though our interactions have been virtual, as has been with many of my blogger friends, we have had a nice time whenever we have chatted. She is also one blogger who makes sure she loves her lovely comments on each and every of my blog post!

 

Without much delay, let me plunge in straight into that yummy ice-cream made with one of the most delightful and healthy fruit… By the way, notice that green background in the below picture? Always makes me miss greenery in this part of the world, each time I see the lush green in most of her pictures… OK, let me stop my blabbering… hehe…

 

 

Dear readers…. I’m Remya who blogs at Remya’s Baking and Cooking . I’m from Kerala currently residing in Seattle, USA living with my sweet daughter, Rydhi (who patiently waits for the dish till photographs are taken) and better half who is very patient, encouraging , supportive, very much tolerant towards my craziness. I started blogging because of the above mentioned reasons about my husband. I started my blog almost two years ago. By Gods grace, it is a real pleasure and refreshing to blog even though there are times that I was lazy and hibernated. For me, my experimentation in cooking set on fire after marriage, when both of us started sharing our life responsibilities…. My mother is a great cook and I think I got some merits of inheritance. I must also thank all fellow bloggers for your constant support and kind words of appreciation. I know I’m not an expert in anything but love to do many things and perfect in nothing…… 🙂

 

Rafee (which I love to call her) is sweetest and genuine friend of mine in this world of blogging. She owns a wonderful blog with yummiest recipes…. I often drool over her recipes in her blog especially for Malabari recipes and countless number of non veg and desserts. I love the way she writes her thoughts….. it is very organic and
straight from her heart. I really admire her consistency in blogging irrespective of her many responsibilities which includes taking care of her family, work life balance  and everything else…. All the best dear Rafee…. for your amazing trip of blogging….

 

 

I’m always thankful that I’m living in this age of ‘world in a click apart’. We are bonded because of the love for food and the joy of sharing…. When Rafee asked me to write a guest post for her….I was so excited to do. I was pretty sure about the category…. which is dessert…. but in a little bit mess of selecting one… But when I told about this ice cream, she was happy and encouraged me to move forward..  So pomegranate ice cream for this sweet tooth girl…

Pomegranate is a nutritious giant. For making this pomegranate ice cream, only three ingredients are required. The basic recipe is obtained from a product leaf and I added the pomegranate juice
for the flavor…. I started from juicing the pomegranate and then strained it…… The residue from the strainer has directly gone into my tummy….
Ingredients:
One tin (14 oz) of condensed milk
2 cups of whipping cream
1 cup of pomegranate juice or juice of 1 medium pomegranate (blended and strained well)
Method:
Chill your beater and bowl, to beat whipping cream in refrigerator for 15 minutes.
Whisk your whipping cream till stiff peaks are formed.
Add in condensed milk and beat on high speed for two minutes.
Now pour pomegranate juice and fold in until well mixed.
Now pour the entire mixture in a 2 litre container and freeze it overnight.

  5. Lovely guest post and ice cream, just wanted to know if pomegranate flavor would be distinct? Like mango and strawberries which have very strong flavor. pomegranate may become mild after its mixed with other contents isnt it?
