As we age, our taste buds change as well. Have you noticed that? There are some foods we were so fond as children, but as we grow, it falls out of favor. That happens vice versa too. As a child, I was more inclined towards anything with chocolate. I see that trait in my elder one too. For Rasha, cake and ice cream is chocolate, nothing else. Slowly, she is admitting coffee as a flavor too. But nothing else qualifies. But now I seem to prefer more fruity flavors in my cakes and desserts. When I enrolled for the Bake-a-thon with Valli in October, I was in a lot of thought. How would the whole thing be? I have been a part of the Blogging Marathon for a few months now and it is a more themed activity, but this was thirteen days of baked goodies, with no specific theme as such. Mango Bread Pudding
Bread is something that is in my pantry at any given point of time, so the love for bread puddings comes naturally! Vegan Raspberry Muffins
My interest towards vegan baking started only when I was forced to go vegan due to medications last year around April for a period of six months. I sometimes wonder whether I would have discovered vegan baking otherwise. Those six months made me realise how tough it is for vegans to even have something from outside. I used to get frustrated at the lack of options and how I would helplessly look at the girls while they enjoy their slice of cake or their bowl of pudding. Eggless Banana Coconut Bread
While doing a post for the Bake-a-thon 2017, I shouldn’t be leaving a banana bake! Bananas are my favorite fruit to bake with. There are so many different types of banana breads and cakes already on the blog and I feel it is never enough. Spiced Banana Breakfast Muffins
Nowadays, I buy just enough bananas for us to eat, so that we don’t have much of leftover to tempt me to go ahead and bake. 😀 When they are ripe, I tend to freeze them so that I can use them for my breakfast smoothies during the weekend. But at times, I can’t stop myself from baking and enjoying them, but I try to keep them as close to being healthy. These banana muffins are made of wholewheat flour (aatta) – even better if you can get hold of wholemeal flour, and spiked with a lot of spices. Sometimes, I really wonder about my girls. They are growing up at a pace that I have no control over. My younger one will turn 7 this January and I am still yearning for her to go back into her diapers! You would remember I had done the first week of the Blogging Marathon #81 in the theme of “Lentils and Sides”. For the second week, the theme I chose was “Apple Desserts”. It is the season of apples. As of now, you can see wide variety of apples on the shelves with competitive prices. Easy Banana Bread
I normally don’t need a reason to bake a banana bread. I don’t even wait for the bananas to ripe! 😀 Since our house is quite warm most of the time, I buy bananas in small quantities so that we finish consuming it, but sometimes doing it doesn’t help and the bananas get riper quicker than we like it. Just like me, the kids also like the bananas in the just-ripe stage, where the sweetness is mild. Once it gets a little softer, none of us would touch it. Earlier I used to bake quite often, but now I have got myself a bit tight on my baking due to my weight goals.
