A mildly spiced and easy grilled chicken, spiked with coffee and cocoa…
Coffee and chocolate in a chicken recipe is something that we can’t imagine. It is challenges like Shh Cooking Secretly that pushes boundaries to try new dimensions to cooking. My family isn’t very receptive to too much adjustment these days but at times, ingredients like chicken make it a tad bit easier. That is why I decided to sign up for this month’s theme of “Fear not the bitter”, suggested by the lovely Seema. She has always been very innovative when it comes to her ideas. I was paired with Swaty from Food Trails, with whom I have previously worked with during this month. for the and after a little discussion, she decided to keep cocoa powder and paprika as my ingredients.
I have been seeing recipes using coffee and cocoa sauce to go along with chicken, but then I came across this recipe and decided to adapt the same. First of all, I wanted a quick fix that wouldn’t take too much of my time. It is getting really hot and the hectic days I have had over the past couple of weeks haven’t been making my life easier. I was a little apprehensive if the recipe would work out, nonetheless I still went ahead with it with a few adjustments. I cooked it with very little olive oil on a grill pan till done and made some pan fried French fries to go with it, which got burned in the process of concentrating on the chicken! Hehe… Of late, I have been burning too many things! HD really loved it. In fact, you won’t even make out the presence of coffee and cocoa powder in it unless you would tell about it. While you go ahead to view the recipe, do check out what Swaty made with her secret ingredients of green apple and mint…

Rafeeda that is the shortest chicken recipe I have come across. Interesting how it comes together so quickly. While I don’t eat chicken, this recipe is something that hubby wouldn’t mind following and trying out. Interestingly, cocoa and dark chocolate have been used for eons in authentic Mexican recipes. Quite surprised that coffee too is used.
I am sure I can adapt this amazing rub on many vegetables or tofu. You said roast coffee and I could almost smell the aroma here. This will be one happy home recipe.
Using coffee and cocoa in a rub is so interesting..Must be super flavourful and very fragrant, I’m sure. Would definitely love to adapt this rub to a vegetarian recipe.
