A delicious vanilla spiked pineapple pudding with wafers all over for extra bite…
By coincidence, it happens that I am posting my US bakes one after the other, for this month’s Bakeathon. Hehe… It just seemed to have happened very randomly. 🙂 I think I will start with a story. When we landed up at my sister’s place, I saw that she had an almost raw pineapple on her counter space. When I opened her fridge, she had a ripe pineapple wrapped in cling wrap in one corner. I asked her why two pineapples. My BIL aka cousin seems to have a fetish for pineapples. Each time he goes to Costco, he has to pick up a pineapple and come home. My sister isn’t fond of this fruit as much she loathes taking off its outside. So it stays outside till it ripens, and then goes into the fridge till it literally threatens to get spoiled. 😀
This pudding was made with one such pineapple, which was very ripe and sweet. My sister was feeling absolutely lazy to cut it. We also had to go over to a friend’s house for dinner and she wanted to carry a dessert for her. That is when I landed up on this link. Like I had mentioned in the banana pudding, Nila wafers are usually used to make puddings with fruit base, since it gives an amazing flavor when it softens and pairs well with the fruit being used. I was the most excited when I found not only Nila but generic brands of wafers in the market. One point – you can’t eat it on its own. Maybe it goes with milk but not otherwise. It feels like it has been made only to make desserts. 😀
Coming back to the recipe, the dessert is made in stages – stewing the fruit for a while, making the pudding base, layeirng the wafers, whipping up the egg white and finally baking. As usual, you can make it easier by using canned pineapples for this pudding. The end result is a mouthful of lots of flavors, and one of the best dishes to make when you have a potluck party. We got a taster at the friend’s house and loved how it felt in our mouth – tart pineapples, melted wafer, smooth pudding and chewy meringue all in one. It reminded me of the Queen of Pudding, which is also baked similarly with egg white meringue on the top. Off to the recipe…
Vanilla Pineapple n Wafer Pudding
Ingredients
- 1 meduim sized pineapple
- 2 tbsp butter
- 1/4 tsp cinnamon powder
- 2 tbsp brown sugar
- 1 box wafers Nila or Great Value brand
- 3 large eggs seperated, white and yolk
- 2 cups milk
- 1/3 cup sugar increase for sweetness
- 3 tbsp corn flour
- 1 tsp vanilla extract
- A pinch of salt
- 1/4 cup icing sugar
Instructions
- Peel and chop the pineapple into small dices. In a saucepan, add the pineapple, brown sugar, cinnamon and butter and cook on low flame till it gets stewed. Allow to cool completely.
- In a saucepan, whisk together the milk, egg yolks, sugar, corn flour, vanilla and salt till homogenous.
- Cook on low flame, whisking constantly till the pudding base thickens. Take off the flame and allow it to cool.
- Whip the egg whites with the icing sugar till stiff peak and set aside.
- Preheat oven to 180 degrees. Keep a 9 inch pan ready.
- Spread half of the wafers at the bottom. Top with half of the pineapple mixture and then half the pudding.
- Repeat the second layer as above.
- Now spread the stiff egg white on top to cover.
- Bake for around 15-20 minutes, till the top is browned.
- Serve warm with ice cream or whipped cream.
