Ingredients

  • 2 cups boiled sweet corn kernels frozen, canned or fresh
  • 2 carrots chopped
  • 2 cucumbers chopped
  • 1 onion minced
  • 2 to matoes chopped
  • 3 tbsp chopped coriander leaves
  • 2 tbsp olive oil
  • Salt and pepper for seasoning

Instructions

  • Combine all ingredients in a large bowl and toss well to combine.
  • Serve immediately!
