Chicken and Corn Quesadillas

  • 6 x 6 inch tortillas
  • 1 chicken breast
  • 1 tsp olive oil
  • 1 heaped tbsp Cajun seasoning
  • 1/2 cup sweet corn
  • 3 tbsp barbeque sauce refer notes
  • Mozarella cheese as required


  • Wash and chop the chicken into small peices. Toss it with the Cajun seasoning.
  • Heat olive oil and fry the chicken till done. Set aside.
  • On a grill pan, place three tortillas. Spread a tbsp each of the barbeque sauce on each tortilla. Sprinkle some cheese.
  • Divide the chicken and corn equally between the three tortillas. Sprinkle some more cheese and press down the remaining tortillas.
  • Toast both the sides till done.
  • Serve hot as is or with salsa and sour cream!


For barbecue sauce, I mixed 2 tbsp tomato ketchup, 1 tsp mustard sauce and 1 tsp honey along with a sprinkling of black pepper and used in this recipe.
