Chicken and Corn Quesadillas
x 6 inch tortillas
heaped tbsp Cajun seasoning
Mozarella cheese as required
Wash and chop the chicken into small peices. Toss it with the Cajun seasoning.
Heat olive oil and fry the chicken till done. Set aside.
On a grill pan, place three tortillas. Spread a tbsp each of the barbeque sauce on each tortilla. Sprinkle some cheese.
Divide the chicken and corn equally between the three tortillas. Sprinkle some more cheese and press down the remaining tortillas.
Toast both the sides till done.
Serve hot as is or with salsa and sour cream!
For barbecue sauce, I mixed 2 tbsp tomato ketchup, 1 tsp mustard sauce and 1 tsp honey along with a sprinkling of black pepper and used in this recipe.
