Bengali Ghee Bhat | Bengal Ghee Rice

Ingredients
3
cups
basmati rice
soaked for 30 minutes and drained
1/4
cup
ghee
15-20
cashewnuts
A handful raisins
3
bay leaf
2
cinnamon stick
3-4
green cardamom
2
black cardamom
4-6
cloves

frozen mixed vegetables
peas, carrot, beans

cup
water
Salt to taste
Instructions
Heat ghee in a saucepan. Briefly fry the cashewnuts. Plump up the raisins. Drain and reserve.
Into the same ghee, add the whole spices and sizzle. Add the frozen vegetables and saute for a minute.
Add the drained rice and fry for 5-6 minutes. Add the water and salt. Keep the flame on high and allow it to come to a boil.
Keep the flame on minimum and cook till done. Give a stir once in between.
Serve hot with side of choice.
Notes
Since the rice is being soaked, I take a ratio of 1 1/2 cup of water for 1 cup rice.
