Bengali Ghee Bhat | Bengal Ghee Rice

Ingredients

  • 3 cups basmati rice soaked for 30 minutes and drained
  • 1/4 cup ghee
  • 15-20 cashewnuts
  • A handful raisins
  • 3 bay leaf
  • 2 cinnamon stick
  • 3-4 green cardamom
  • 2 black cardamom
  • 4-6 cloves
  • 1 cup frozen mixed vegetables peas, carrot, beans
  • 4 1/2 cup water
  • Salt to taste

Instructions

  • Heat ghee in a saucepan. Briefly fry the cashewnuts. Plump up the raisins. Drain and reserve.
  • Into the same ghee, add the whole spices and sizzle. Add the frozen vegetables and saute for a minute.
  • Add the drained rice and fry for 5-6 minutes. Add the water and salt. Keep the flame on high and allow it to come to a boil.
  • Keep the flame on minimum and cook till done. Give a stir once in between.
  • Serve hot with side of choice.

Notes

Since the rice is being soaked, I take a ratio of 1 1/2 cup of water for 1 cup rice.
