Orange Cranberry Scones

Ingredients

  • 2 1/4 cups all purpose flour refer notes
  • 85 gm cold butter cubed
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • Zest and juice of one big orange
  • 1 large egg
  • 1/4 cup milk
  • 3/4 cup dried cranberries
  • 2 tbsp brown sugar

Instructions

  • Preheat oven to 200 degrees. Line a baking sheet and keep ready.
  • In a food processor, add all the dry ingredients along with the butter, and blitz till the mixture looks like breadcrumbs.
  • Add in the orange zest, orange juice, egg and milk and blitz till the mixture comes together.
  • Gather onto the prepared baking sheet. Add the cranberries and bring the dough together. Pat into a 30 cm diameter round and cut into 8 slices.
  • Sprinkle the brown sugar on top. Bake for 15 minutes. Grill the top for two minutes.
  • Serve warm with a cup of coffee!

Notes

If the mixture feels sticky, add a tbsp of flour at a time just till the dough feels fine, do not add too much flour. Additional flour maybe needed depending upon how much orange juice has been added.
You can skip the egg to make it eggless. In this case, start with 2 cups of flour and then add more if necessary.
To add some flavor, you can sprinkle some cinnamon along with the brown sugar.
