Peel and chop the carrots into meduim peices. . Add all the ingredients into a blender and blend until smooth.
In a microwaveable bowl, put the carrots with water to its level. Microwave for 3 minutes, check for a minute. Cook again with one-minute intervals till soft and mushy.
Take out of the water and allow it to cool.
Meanwhile, keep the agar agar soaked in the water on low flame and melt it. Cool slightly.
Combine all the ingredients into a blender and blend till smooth.
Pour into an small glass pan and leave it to set in the refrigerator.
Serve it cold, topped with almond praline or chopped nuts.
