Remember my quinoa salad post? I had mentioned in that post that my first experience with quinoa was not really encouraging. It was this quinoa porridge that I had tried first, and I hated it to the core. But I still ate it since I knew nobody would touch it and I don’t like food going into the bin. While eating it, I sat searching on Google as to where did I go wrong, and it was one basic error – not washing the quinoa properly!
Most of the grains doesn’t have any change in taste when washed. It just ensures that the dirt is gone. However, for quinoa you have to wash it as much as you can to remove the bitterness off it. Once you feel that it is good to go, go ahead with cooking it and it becomes a pretty looking pearl texture, ready to go into anything that you are cooking it with.
Now how do you know that the quinoa is clean is a big question. I would just say, go by your instincts. That is the best way I can put it. 😀 After the salad experience, I made this breakfast pudding again and was much happier with the experience. If you are bored of oats or want something different for your morning routine, then give it a try. Quinoa is normally paired with non-diary milk for best results. I have never tried it with milk and can’t vouch for it.
You cook the quinoa first in double the water till it absorbs all the water and looks pearl like. Then you add the remaining ingredients and just cook for a few minutes. Cooking it further will make it take away all the liquid in the porridge. But if you want it thicker, just keep aside for sometime, and it absorbs all the excess liquid, just like how oats does. My next in line is to try oats and quinoa together for porridge as breakfast. 😉 Just trying to explore different varieties, you see… Off to the recipe…
- ½ cup quinoa
- 1 cup water
- 1 cup almond milk
- ¼ tsp cinnamon powder
- 2 tbsp raw sugar
- Dried figs and almonds for topping
- Wash the quinoa well and let to drain.
- Boil water in a saucepan. Add the quinoa and cook till it absorbs all the water and plumps up, looking like pearls.
- Add in the milk, cinnamon and raw sugar and cook till homogeneous.
- Server warm or cold with the toppings.
