Wholewheat Date Cocoa Muffins

Ingredients

  • 90 gm dates chopped
  • 150 ml water
  • 1/4 tsp baking soda
  • 30 gm butter softened
  • 1/4 cup raw sugar
  • 1 egg
  • 1/2 cup minus 1 tbsp wholewheat flour
  • 1 tbsp cocoa powder
  • 1/8 tsp baking powder
  • A pinch salt

Instructions

  • Combine the chopped dates and water in a saucepan and cook on high flame till the water boils.
  • Switch off and add the soda. The mixture will bubble. Stir till the dates are melted. Some bites are OK.
  • Preheat oven to 180 degrees. Line a 6 cup muffin pan.
  • Beat the butter and sugar till fluffy. Add the egg and beat again.
  • Add in the date water and fold.
  • Add the in the dry ingredients and fold in till combined.
  • Spoon into each of the muffin cups till 3/4.
  • Bake for 25-35 minutes, till a skewer comes out clean.
  • Cool on rack and enjoy!
