Combine the chopped dates and water in a saucepan and cook on high flame till the water boils.
Switch off and add the soda. The mixture will bubble. Stir till the dates are melted. Some bites are OK.
Preheat oven to 180 degrees. Line a 6 cup muffin pan.
Beat the butter and sugar till fluffy. Add the egg and beat again.
Add in the date water and fold.
Add the in the dry ingredients and fold in till combined.
Spoon into each of the muffin cups till 3/4.
Bake for 25-35 minutes, till a skewer comes out clean.
Cool on rack and enjoy!
