Tiganites ~ Greek Pancakes

Ingredients

  • 2 cups lukewarm water
  • 1 tsp dried yeast
  • 1 cup all purpose flour
  • 1 cup wholwheat flour
  • 1/2 tsp salt
  • 1 tsp sugar
  • Oil for frying
  • Honey and walnuts to serve

Instructions

  • Whisk the yeast into the water and allow to rest for five minutes.
  • Add in the ingredients from flour to sugar and whisk well till moist. The batter will be thick.
  • Allow the batter to rest for 15-20 minutes.
  • Heat a griddle and brush some oil.
  • Scoop out 1/3 cup batter and drop onto the griddle. Shape into a pancake.
  • Cook on both the sides till nicely done. These pancakes are thick, so cook till it is done inside.
  • Repeat with all the batter, makes around 8 pancakes.
  • Serve warm with honey and walnuts.

Notes

You can use all purpose flour completely for this recipe. Using more wholewheat flour, however would make it too dense.
