Sticky Date Flapjacks

Ingredients

  • 100 gm date paste
  • 2 tbsp water
  • 1/4 tsp baking soda
  • 100 gm butter
  • 50 gm brown sugar
  • 1 tbsp golden syrup
  • 150 gm rolled oats

Instructions

  • Preheat oven to 180 degrees. Grease and line a 4 inch square pan.
  • Combine the date paste, water and baking soda in a saucepan and heat on low flame. The mixture will start bubbling. Break down the paste into a smooth mixture. Set aside.
  • Melt the butter, brown sugar and golden syrup into a smooth mixture. Add the oats and toss well to combine.
  • Add half the oats mixture into the preparped pan and press down.
  • Spread the date mixture on top. Spread the remaining oats mixture and flatten well.
  • Bake for 40 minutes till set.
  • Take out the flapjack from the pan and cool on wire rack. Cut and serve.

Notes

If using dates, weigh the dates after pitting them. Add water to it level and baking soda and cook on low flame till the mixture froths up and the dates start breaking up. Switch off and drain the dates. Measure out 2 tbsp water and add to the broken dates. Grind the mixture till smooth. Use as required.
