Simple Peach Cobbler

Ingredients

  • 6-7 peaches
  • 2 tbsp butter 25 gm
  • 1/2 cup brown sugar
  • 1 tbsp vanilla essence

FOR COBBLER MIX

  • 1 cup all purpose flour
  • 1/2 cup brown sugar
  • 1 1/2 tsp baking powder
  • A pinch of salt
  • 1 cup milk
  • 2 tbsp sour cream
  • 4 tbsp butter melted (50 gm)
  • 1/3 cup crushed nuts optional

Instructions

  • Prehaet oven to 180 degrees. Keep aside a 13x9 inch pan.
  • Chop the peaches and deseed them. Spread them on the pan.
  • Sprinkle the brown sugar and vanilla over it. Chop the butter and spread. Bake for 10 minutes.
  • Meanwhile, in a bowl, whisk together the flour, baking powder, sugar and salt till combined.
  • Add the milk and sour cream and whisk till well combined.
  • Add the melted butter and give it just one mix. Do not blend in.
  • Take out the pan with the peaches and toss the whole peaches with the mixture. Pour the batter all over the peaches and push it back into the oven.
  • Bake for another 25 to 30 minutes till done. Broil for a minute to brown the top.
  • Serve warm - tastes best then! - or at room temperature with whipped cream or ice cream.
