Pear Cinnamon Cake

Ingredients

  • 3 medium pears peeled and chopped
  • 1/2 cup brown sugar
  • 1 tsp cinnamon powder
  • 100 gm butter softened
  • 1/2 cup sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla essence
  • 1 1/2 cup all purpose flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk

Instructions

  • Preheat oven to 180 degrees. Grease and flour a loaf pan well.
  • Mix the pears, brown sugar and cinnamon powder and set aside.
  • Beat butter and sugar till creamy.
  • Add eggs one at a time and beat after each addition.
  • Add the vanilla essence and beat in.
  • Whisk the flour, baking powder and salt well in a bowl.
  • Add half the dry ingredients and half the milk into the butter mixture and beat till combined.
  • Add the remaining flour mixture and milk and beat till the batter is done.
  • Pour 1/3 of the batter into the pan and spread. Sprinkle half the pear mixture on it.
  • Spread the next 1/3 of the batter on top of the pear mixture. Sprinkle the remaining pear mixture all over and then top with the leftover batter. Tap lightly to flatten the top.
  • Bake for 45 to 60 minutes till skewer inserted comes out clean.
  • Cool in pan for 10 minutes before transferring to a cooling rack to cool completely. Slice and serve to enjoy with a cup of tea.
