One Pot Turmeric Vegetable Rice

Ingredients

  • 3 tbsp oil
  • 2 cardamom
  • 1 bay leaf
  • 1 cinnamon
  • 3 cloves
  • 10 peppercorns
  • 1 star anise
  • 2 sprigs curry leaves
  • 1 large onion sliced
  • 3 green chillies slit
  • 1 large tomato chopped
  • 1 small cauliflower 200 gm, florets removed
  • 1 large potato chopped
  • 1 large carrot chopped
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 2 cups basmati rice soaked for 30 minutes and drained
  • 3 3/4 cup hot water
  • 1/2 cup frozen peas thawed and drained
  • Salt and pepper to taste
  • 1/2 tsp garam masala powder

Instructions

  • In a large saucepan, heat oil. Add in the whole spices and let them sizzle.
  • Add in the curry leaves, onion and green chillies and saute till wilted.
  • Add in the vegetables and toss it up well. Sprinkle in the turmeric and chilli powder and mix well.
  • Let the mixture steam on low flame for around five minutes, stir occasionally not avoid sticking to the pan.
  • Add in the drained rice and saute for five minutes till the rice turns crisp and dry.
  • Add in the hot water and peas. Keep on high flame till the mixture boils.
  • Sprinkle in sufficient salt, pepper and the garam masala.
  • Keep on the lowest flame possible and cook on closed lid till the water is absorbed and the rice is well cooked.
  • Switch off and fluff up the rice with a fork. Serve hot with raita, pickle and any side.
