Mushroom Spinach Frittata

Ingredients

  • 2 tbsp olive oil
  • 3 cloves garlic pounded
  • 1 onion minced
  • 250 gm mushroom sliced
  • 1 bunch spinach chopped
  • 1/2 tsp paprika powder
  • 1/2 tsp dried parsley
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 6 small eggs
  • 2 tbsp milk

Instructions

  • Preheat oven to 180 degrees. Grease an 8 inch square pan ready.
  • In a saucepan, heat oil. Fry the garlic briefly.
  • Add the onion and saute till wilted.
  • Add the mushroom and spinach, along with the dry spices, salt and pepper and mix well. Cook for a couple of minutes and switch off. Allow to cool slightly.
  • In a large bowl, whisk the eggs and milk till well combined.
  • Add the sauteed mixture and mix well. Pour into the prepared pan.
  • Bake for 20 minutes or till done.
  • Serve warm with salad or with toast.
