Preheat oven to 180 degrees. Grease an 8 inch square pan ready.
In a saucepan, heat oil. Fry the garlic briefly.
Add the onion and saute till wilted.
Add the mushroom and spinach, along with the dry spices, salt and pepper and mix well. Cook for a couple of minutes and switch off. Allow to cool slightly.
In a large bowl, whisk the eggs and milk till well combined.
Add the sauteed mixture and mix well. Pour into the prepared pan.
Bake for 20 minutes or till done.
Serve warm with salad or with toast.
