Koonthal Porichathu ~ Squid Fry

Ingredients

  • 1 kg squid cleaned and cut into roundrels
  • 2 tsp red chilli powder
  • 1 tsp Kashmiri red chilli powder
  • 1 tsp turmeric powder
  • 1 tbsp ginger garlic paste
  • Juice of one lemon
  • Salt to taste
  • 1 tsp pepper powder
  • 2 tbsp cocont oil
  • 2 sprig curry leaves

Instructions

  • Combine the squid along with ingredients from red chilli powder to pepper powder and mix well. Marinate for at least an hour.
  • Add the marinated squid into a pressure cooker. Cook for three whistles on high. Switch off and allow it to cool
  • Heat oil, fry the curry leaves till crisp.
  • Add the cooked squid along with all its liquid and saute on high heat till the squid becomes brown and liquid is all coated on it.
  • Serve hot as side with rice and curry or along with some chapathis!

Notes

Overcooking the squid may make it rubbery. Make sure to cook on high flame so that it thickens the marinade faster.
