Jalapeno Chicken

Ingredients

  • 500 gm boneless chicken refer notes
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 10 gm butter
  • 1 onion minced
  • 1/3 cup jalapeno slices
  • 2 cloves garlic crushed refer notes
  • 1/4 cup mayonnaise
  • 1 cup water

Instructions

  • Cut the chicken into small cubes and marinate it in salt and pepper. Set aside.
  • Heat olive oil and butter in a skillet. Add the chicken and slightly fry till it changes color and releases its juices.
  • Add the onion, jalapeno and garlic and toss well. Cook for around five minutes.
  • Add the mayonnaise and water, adjust seasoning. Cook, stirring in between till the chicken gets cooked.
  • Switch off, garnish with more jalapeno and coriander leaves and serve hot with bread or any other flatbread.

Notes

I like to use chicken with bones that I ask the butcher to cut into really small pcs to cook easily. It tastes much better too. I have used chicken thighs in the click. 
You can use garlic powder instead of the crushed garlic.
