Heat oven to 180 degrees.
Beat butter and sugar till creamy. Add in the egg and vanilla and beat till combined.
Sift in the flour, cocoa powder, soda and salt into the beaten mixture and gently beat to incorporate. Fold in the white chips.
Drop spoonfuls or shape into cookies onto an ungreased cookie sheet.
Bake for 8 to 10 minutes. The cookies will be soft but will harden upon cooling.
Cool slightly on the tray and then transfer to a cooling rack and allow to cool completely.
Enjoy with a cup of milk and store remaining cookies (if they remain for too long!!!) in an airtight container.
