Eylanchi ~ "Love Letters"

Ingredients

  • FOR THE CREPES:
  • 1 cup all purpose flour maida
  • 2/3 milk
  • 1 large egg
  • 1 cup water
  • A pinch of salt
  • FOR THE FILLING:
  • 1 cup grated coconut
  • 2 tbsp sugar
  • 1/4 tsp cardamom powder
  • 1 tsp ghee

Instructions

  • Whisk all the ingredients to make crepes till smooth and watery.
  • Make thin crepes out of the same on a crepe pan with a little oil brushed. You only need to cook one side, no need to flip.
  • Heat ghee in a saucepan. Add all the other ingredients for the filling and saute on low flame for a couple of minutes, just till the sugar melts and the coconut starts to look crispy. Switch off.
  • Spread a thin layer of the coconut filling in the centre of one crepe and roll.
  • Fold the centre (like seen in the picture) and transfer to a serving plate. Repeat till all crepes are done.
  • Serve warm with a cup of chai!

Notes

You can use the coconut without sauteing in ghee. Just mix all ingredients without the ghee till combined, though this sauteed version is slightly more delicious! :)
