Whisk all the ingredients to make crepes till smooth and watery.
Make thin crepes out of the same on a crepe pan with a little oil brushed. You only need to cook one side, no need to flip.
Heat ghee in a saucepan. Add all the other ingredients for the filling and saute on low flame for a couple of minutes, just till the sugar melts and the coconut starts to look crispy. Switch off.
Spread a thin layer of the coconut filling in the centre of one crepe and roll.
Fold the centre (like seen in the picture) and transfer to a serving plate. Repeat till all crepes are done.
Serve warm with a cup of chai!
Notes
You can use the coconut without sauteing in ghee. Just mix all ingredients without the ghee till combined, though this sauteed version is slightly more delicious! :)
