Put the jackfruit and water into a microwave dish. Microwave on high for 5 minutes. Allow to cool and grind into a smooth paste.
Preheat oven to 180 degrees. Grease a loaf pan - I used a disposable one.
Beat butter and sugar till soft and fluffy. Beat eggs, one at a time till combined. Add the cardamom and beat.
Sift in the flour, baking powder, baking soda and salt into the beaten mixture.
Pour the jackfruit pulp and fold in the mixture till all moist. Fold in the chopped jackfruit and cashew nuts.
Pour the batter into the prepared pan and bake for 30-40 minutes till skewer comes out clean.
Allow to cool in pan for five minutes and then flip onto a cooling rack till completely cooled.
