Ingredients

  • 2 cups frozen corn kernels boiled till soft and drained
  • 1 large avocado peeled and cubed
  • 1 large onion chopped
  • 2 to matoes chopped
  • 1 clove garlic minced
  • Juice of one lemon
  • Salt and pepper to taste
  • 1/2 tsp cayenne pepper optional
  • 4 tbsp chopped coriander leaves
  • 1 tbsp dried parsley

Instructions

  • Toss up all the ingredients in a bowl till well combined.
  • Serve immediately.
