Chocolate Strawberry Cake

Ingredients

  • 1 1/4 cup all purpose flour
  • 1/4 cup cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup 85 gm butter, softened
  • 3/4 cup sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1 box 300 gm strawberry, hulled and quartered
  • For the ganache:
  • 1/3 cup cream
  • 1/3 cup chocolate chips

Instructions

  • Preheat oven to 180 degrees. Grease and flour an 8 inch pan and set aside.
  • Whisk the dry ingredients in a bowl.
  • In another bowl, beat the butter and sugar till fluffy. Add the egg and beat. Add the milk and vanilla and beat to combine.
  • Slowly add the dry ingedients in batches and fold in till moist.
  • Fold in the strawberries.
  • Pour the batter into the prepared pan and bake for around 45 minutes till the skewer comes out clean.
  • Cool in the pan for 10 minutes and then carefully flip to a cooling rack to cool completely.
  • Meanwhile, for the ganache, warm the cream in a microwave for 45 seconds. Add the chocolate chips and stir till smooth.
  • Spread the ganache over the cooled cake and allow it to settle. Slice and serve!
