Chilli Chicken Paratha (Cheat version!)

Ingredients

  • 2 tbsp coconut oil
  • 1 tbsp ginger garlic paste
  • 3 green chillies minced
  • 2 medium onions minced
  • 1 large tomato chopped
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp Kashmiri chilli powder
  • 1 1/2 cup shredded cooked chicken from leftover rotisserie chicken
  • 1/4 tsp garam masala
  • Salt and pepper to taste
  • Chopped coriander leaves as desired
  • 8 ready-made frozen parathas

Instructions

  • Heat oil in a saucepan and briefly fry the ginger garlic paste.
  • Add in the onions and chillies and saute till wilted.
  • Add in the tomato and cook for a couple of minutes.
  • Add in the powders and saute till the raw smell is gone.
  • Add the shredded chicken, the garam masala, salt and pepper and toss well. Check for seasoning.
  • Cook on low for around 5 minutes. Add in the coriander leaves and switch off. The stuffing is ready.
  • Divide the stuffing into 4 equal portions.
  • Heat a pan till hot. Keep on low flame.
  • Take out one paratha and put it on the pan. Spread one portion of the filling evenly on it.
  • Take another paratha and press it on top. Seal the sides by pressing with your fingers.
  • Flip after sometime to cook the other side. Flip a couple of times till both sides are well browned.
  • Repeat with the other 6 parathas - total you will make 4.
  • Serve warm as is or with some raita and pickle!
