Cauliflower Pizza

Ingredients

  • 1 small cauliflower 150-200 gm
  • 1 small egg
  • Salt and pepper to taste
  • 1 tbsp coconut flour
  • 1 tsp oregano
  • FOR TOPPING:
  • 1 tbsp tomato paste
  • 200 gm chicken cooked in salt and pepper
  • Vegetables of choice onion, tomato, capsicum
  • 1/4 cup mozarella cheese

Instructions

  • Divide the cauliflower into florets. Wash well.
  • Put into a microwaveable bowl and sprinkle some water over it. Microwave for 7 minutes.
  • Take out, allow it to cool.
  • In a processor, blitz till smooth. Empty the cauliflower grains onto a towel and squeeze the excess water out.
  • Put back into the processor, along with the other ingredients and give it a blitz.
  • Preheat oven to 180 degrees. Line a pan with baking paper.
  • Spread the cauliflower base on the tray and prick it lightly with fork. Bake for 15 minutes or till crisp.
  • Take out, sprinkle the toppings and the cheese, and bake for another 5 minutes or till the cheese is melted.
  • Enjoy hot!
