Black Forest Cheesecake Shots

Ingredients

  • For compote and sauce:
  • 1 cup fresh cherries pitted
  • 50 ml water
  • 2 tbsp sugar
  • 1 tsp cornflour
  • For rest:
  • 2 sachets non-diary whipped powder I used DreamWhip
  • 125 ml cold milk
  • 1 tsp vanilla extract
  • 200 gm Philadelphia cheese
  • 2 tbsp cocoa powder
  • For decoration:
  • 1 sachet non-diary whipped powder I used DreamWhip
  • 60 ml cold milk
  • 1 tsp vanilla extract
  • 4 cherries for topping

Instructions

  • First we make the compote and the sauce. Add the cherries, water and sugar into a saucepan and cook on low flame till the cherries are all smashed up.
  • Drain the smashed cherries and reserve. Allow the liquid to cool slightly.
  • Mix in the cornflour and cook on low flame till slightly thickened. Allow to cool completely.
  • In a clean bowl, add the whipped powder, milk and vanilla and beat till it becomes stiff. Tip in the cheese and cocoa powder and beat till combined.
  • Keep four bowl ready. Spread little of the cheese mixture, top with some of the smashed cherries, top with some more cheese mixture and drizzle with some sauce.
  • Do this for all cups. Allow to set for an hour.
  • Beat the powder, milk and vanilla till stiff. Put into a piping bag and decorate on top of the prepared bowls.
  • Drizzle some more sauce and top with a cherry to finish off.

Notes

You may use whipping cream as well. I used around 2 cup of whipped cream for the cheesecake base and 1 cup of whipped cream for the topping.
I added a bit of sugar while beating the cheese mixture and regretted it! The sauce and the cherry had already made the whole dessert nice and sweet! So if you need more sugar, add it while beating the cheese and cocoa in.
