Beetroot Raita
A cooling yogurt salad with beetroot
Prep Time 15 minutes minutes Cook Time 5 minutes minutes Total Time 20 minutes minutes
- 1 medium sized beetroot
- 1 tsp coconut oil
- 1 1/2 cup thick yogurt
- 2 green chillies minced
- 1/2 tsp cumin powder
- Salt and pepper to taste
- Coriander leaves for garnish
Peel and grate the beetroot.
Heat oil in a saucepan and sauté the beetroot with little salt till the raw smell is gone.
Allow to cool completely.
Once cooled, add in the remaining ingredients and whisk in till well combined.
