Beetroot Raita

A cooling yogurt salad with beetroot

Ingredients

  • 1 medium sized beetroot
  • 1 tsp coconut oil
  • 1 1/2 cup thick yogurt
  • 2 green chillies minced
  • 1/2 tsp cumin powder
  • Salt and pepper to taste
  • Coriander leaves for garnish

Instructions

  • Peel and grate the beetroot.
  • Heat oil in a saucepan and sauté the beetroot with little salt till the raw smell is gone.
  • Allow to cool completely.
  • Once cooled, add in the remaining ingredients and whisk in till well combined.
