I could have moved away from the chocolate theme, while doing today’s post for this month’s Fantastical Food Fight challenge. Sarah had messaged us that this month, the theme would be “Candy”. It is obvious because December is considered to be a sweet month and candy is surely a part of it. After a little bit of confusion, she clarified that candy could include fudge, squares, bites, anything that looked like a candy. I was initially planning to sit out of the theme, since I am not much into candy making.

 

The time I had baked the Fudge Brownies for our school meet-up, I wanted to make something else for the kids. My eyes fell on the pack of marshmallows that Azza had finished 80 percent and wouldn’t eat the rest since it didn’t appeal to her anymore. It always happens, isn’t it? They want everything but then the interest just waves off. Anyway, so I had to finish it off. That’s when my mind thought, why not make some “Rocky Road Bites”? The kids would enjoy it, and I had all ingredients in my pantry…

 

I made them, shot them and carried them to the get together. It did finish off almost. There were little leftovers which I nibbled in, since the different textures when put together was truly amazing! I guess I liked these more than the girls did… hehe… So as I was done with it and moving it to my drafts, I silently thought, “Why not I email Sarah and ask her if these bites do fall into candy category?” I wrote to her and she replied back, “Yes! Sounds interesting!” So voila, here it is, being a part of this month’s candy theme…

Rocky Road is given its name mainly because of its texture. I hope you get it when you go through the ingredients. There is a debate who actually introduced it. Wikepedia tells me that it is Australia and the start of these bites are really interesting to know, and a bit odd too! 😀

 

The main ingredient for a rocky road are the marshmallows and crushed biscuits, all other ingredients are as per your choice. I went ahead and added some desiccated coconut and crushed pistachios for the additional bites. There are some recipes which use cherries as well, which I wouldn’t use, since I don’t like them, but I feel adding raisins would be a good idea too. These bites are considered to be excellent party finger food, is widely sold at school fairs, and makes a good snack on the go, packed with so much munch in it!

 

The version I am sharing here is  a mix and set recipe. You just need to melt the chocolate, golden syrup (mainly used for its stickiness) and butter. Then the melted mixture is tossed up with all the bites and allowed to set. It may not necessarily cut into neat squares, but the unkempt look has a beauty to it. So I suggest not to try make it perfect. Like I mentioned, the add-ons are totally your call, and you can add anything you want into it, along with the marshmallows and biscuits. Try this and enjoy munching!

Rocky Road Bites

Ingredients

  • 200 gm milk chocolate
  • 1 tbsp golden syrup
  • 10 gm butter
  • 60 gm mixed small marshmallows
  • 10 tea biscuits
  • 1/4 cup desiccated coconut
  • 1/4 cup pistachios chopped (or any nut of choice)

Instructions

  • In a large bowl, crush the cookies. Add the marshmallows, desiccated coconut and pistachios and toss well.
  • Melt the chocolate, golden syrup and butter till smooth. Pour into the bowl and mix well to coat.
  • In a buttered or lined 4 inch pan, spread the mixture and flatten the top. Allow it to set in the fridge for an hour.
  • Cut into pieces and serve.

Notes

You can use honey instead of golden syrup.
