Microwave Bread Pudding {Single Serve}

Alhamdulillah, so far I have been having a good time organizing the 3 back-to-back posts. I am glad I have received some very good responses for the series as well. Since from last month, I have started the book review series too, I am planning to space out my series from the new year, InShaAllah. I may move the 3 back-to-back to becoming a bi-monthly series and making the book review a monthly one so that my books move in the shelves and don’t rot! 😉 Let’s see how it goes…  I would love to keep my blogging journey as stress free as possible, so I have to make sure that I don’t fall into too many plans at the moment! 🙂

 

OK, so what do we have in store for this month? I guess when you saw the title of today’s post, you must have got a bit of an idea. Yes, it is 3 back-to-back microwave single serve treats! There are times when we crave for a treat, but don’t want to end up making a big batch and that is when this comes to play. I have already shared a lot of mug cakes, but this time I decided not to limit myself only to mug cakes. Surely, there is one coming up tomorrow, but today we start off with this simple bread pudding!

I love bread puddings but normally reserve making it for a big crowd since it is tough to make it small quantities. There is no turning back after I discovered this recipe. It is perfect for that sudden pangs of wanting to have some bread pudding. 😀 I topped it up with my favorite things – almonds and chocolate chips, but feel free to top it up with whatever you like – berries would be lovely! Even better, top it up with some ice cream… I love making this pudding as a lone breakfast. At times, HD and B are already gone by the time I wake up over the weekend, the kids are still sleeping, so much so that they wake up close to lunch time, so this is a breakfast that I go to. It has everything in it – bread, milk, eggs, little sugar, some nutty goodness and some chocolate to soothe! Cook Time 5 minutes

Ingredients

  • 3 slices bread chopped
  • 1/2 cup milk
  • 1 egg
  • 1 tbsp raw sugar
  • 1/2 tsp vanilla extract
  • A pinch of cardamom powder
  • A pinch of cinnamon powder
  • 1 tbsp chopped almond
  • 1 tbsp chocolate chips

Instructions

  • Add the bread into a ramekin.
  • In a bowl, mix ingredients from milk to cinnamon powder till nicely whisked. Pour over the bread.
  • Sprinkle the almond and choocolate chips on top.
  • Microwave for two minutes. Take out and set aside for 5 minutes.
  • Dig in!

    Try same with left over tea cakes or marble cakes too !
