This week, for the Blogging Marathon #90, I chose the theme “Wraps and Rolls”. Most of the time, the themes I choose are easy, but are too easy that I get confused what to make and at the end skittle through my posts! 😀 Having too many ideas is also not a good thing, isn’t it? 🙂

 

The first one I chose to make were the Kolkatta Egg Rolls. The egg rolls are a famous street food in the lanes of Kolkatta, or formerly called as Calcutta. Freshly made parathas, smothered with an omelette, filled with some vegetables, sometimes even having a sprinkling of shredded chicken. Kolkatta folks literally go gaga over these rolls, as to how delicious they can be and I wanted to test out if they were actually delicious. So I used HD as my guinea pig and got making one roll, albiet a cheat version!

 

Who has the time to make parathas from scratch? I resorted to making them using frozen parathas, which is a staple in my fridge. (Remember these Chilli Chicken Parathas? Another lazy recipe… 😉 ) It is so easy to make. Cook the paratha, pour the beaten egg on top, flip and cook till done, and serve with a generous stuffing of cabbage, cucumber and carrots. You can even drizzle in some ketchup or chilli sauce but that’s purely optional. Off to the recipe…

Kolkata Egg Roll | Cheat Version

Kolkatta style street food, made in a cheat way!

Prep Time 5 minutes
Cook Time 2 minutes
Total Time 7 minutes

Ingredients

  • 1 frozen paratha
  • 1 egg beaten with salt and pepper
  • 2 tbsp sliced cabbage
  • 2 tbsp sliced cucumber
  • 2 tbsp sliced carrot
  • Salt and pepper to taste
  • 1/2 tsp vinegar or lemon juice
  • Ketchup or chilli sauce as required optional

Instructions

  • Mix the cabbage, cucumber and carrot in a bowl. Combine the vinegar, salt and pepper to taste and toss it up well. Set aside.
  • Heat the tawa. Put one side of the paratha down and cook till it is half done. You may flip to check once, but make sure to flip it back.
  • Pour the beaten egg over the half cooked paratha and cook on low flame till the egg looks done.
  • Flip and cook for a couple of minutes and switch off.
  • Take onto the serving plate, sprinkle in the prepared salad. Drizzle ketchup or chilli sauce if using and roll. Serve immediately.
