Eylanchi ~ “Love Letters”

I was wondering why this snack never appeared on the blog! Hmm… this happens to be one of HD’s favourite chai time snack. I don’t know how much he loves it but whenever we have sudden guests and he runs down to the restaurant to get some snacks, he would pick up a few of these. The restaurant ones would be so sweet that the guests wouldn’t eat it much, however once they are gone, he would happily sit and have them.

Umma would also make them each time she would run out of ideas for tea snacks. I don’t understand why they have a tag name “Love Letters” – may be it is because of the sweetness hidden inside a normal cover! 🙂 There is another interesting name for  this snack in my place – mayyithappam. “Mayyith” actually means dead body… grrr… I would always tell umma not to call it by that name! Sounds so gross, right? Hehe… Anyway, this is the way that umma used to make – coconut filled in plain maida dosa. When I checked up a recipe book I had, it involved making rice dosas, and I have noticed that even restaurant ones we get here have a mix of rice flour and maida… Till I try out the more authentic version InShaAllah next time I get time to try it – this is so much more easier! – let us see the way umma, and I make it for a quickie…

Ingredients

  • FOR THE CREPES:
  • 1 cup all purpose flour maida
  • 2/3 milk
  • 1 large egg
  • 1 cup water
  • A pinch of salt
  • FOR THE FILLING:
  • 1 cup grated coconut
  • 2 tbsp sugar
  • 1/4 tsp cardamom powder
  • 1 tsp ghee

Instructions

  • Whisk all the ingredients to make crepes till smooth and watery.
  • Make thin crepes out of the same on a crepe pan with a little oil brushed. You only need to cook one side, no need to flip.
  • Heat ghee in a saucepan. Add all the other ingredients for the filling and saute on low flame for a couple of minutes, just till the sugar melts and the coconut starts to look crispy. Switch off.
  • Spread a thin layer of the coconut filling in the centre of one crepe and roll.
  • Fold the centre (like seen in the picture) and transfer to a serving plate. Repeat till all crepes are done.
  • Serve warm with a cup of chai!

Notes

You can use the coconut without sauteing in ghee. Just mix all ingredients without the ghee till combined, though this sauteed version is slightly more delicious! 🙂
