Elaneer Pudding ~ Tender Coconut Pudding

Tender coconut, or “elaneer” as we call it in Malayalam, is something that is so readily available back home, whether it is in your own house or with the street vendors. “Kerala” itself means “the land of coconut”, so you can understand it when I say that there is no dearth of coconut trees all across Kerala. Actually, I feel that the abundance of these tall beautiful palm trees is what makes the greenery back home very soothing.

Making pudding with elaneer has been on my to-do since quite long. I really do not like having it as it is, somehow its taste doesn’t appeal to me. However, I have had some very good memories of having elaneer puddings at many functions back home and also relish it with a full mind. Once home, noting that time that D gets the “thengukayattakaaran” – the coconut tree climber – my sister asked him to get a few elaneer so that we could make this pudding. I was already having in my mind the normally prepared hardened type of pudding that I have always had. Even searches on Google will show you something similar. But my sister had other plans. She asked me to stay away from her and went ahead making the way she had tasted it somewhere.

 

Believe me, this is the best elaneer pudding I have had. The previous ones I had tasted were normal agar-agar pudding with either pulp cut into it or ground along with milk and condensed milk. Somehow the milk would just overpower the taste of the elaneer. But here, the whole elaneer, from its water to pulp is fully put into use. As you savor each spoon, the intermittent bites of the water jelly along with the flowy pulp pudding just transports you to another world! I have to seriously urge all of you that if you do find good elaneer anywhere, then don’t think twice – try this and enjoy it! I should sincerely thank my sister for preparing this and my only contribution are the pictures! Hehe… She had made three times the quantity I mentioned below as we have a large entourage to distribute to, anytime we make something at home… 🙂 Off to this delicious recipe…

Elaneer Pudding ~ Tender Coconut Pudding

A delicious pudding with the goodness of tender coconut!

Ingredients

  • 3 tender coconuts pulp and water separated
  • 300 ml milk
  • 100 ml condensed milk
  • 2 tbsp sugar
  • 10 gm agar agar china grass, soaked in water for 20 minutes and drained

Instructions

  • Combine the tender coconut water, sugar and half the agar agar in a bowl.
  • Keep on low flame, stirring occasionally till the agar agar melts. Do not boil the mixture.
  • As soon as the agar agar melts, pour the mixture into a deep and flat pan. Allow to set.
  • Blitz the tender coconut pulp, milk and condensed milk in a blender till smooth.
  • Pour into a pan, add the remaining agar agar and cook on low flame till melted.
  • Pour the coconut pulp mixture into a setting bowl and allow to cool.
  • Now cut the already set coconut water mixture into squares and mix it into the pulp mixture.
  • Place the bowl into the refrigerator and allow to set for a couple of hours.
  • Serve and enjoy!

Notes

To make it vegan, replace the milk and condensed milk with a 400 ml can of coconut milk.

  5. I never had this pudding before, but you are right the pictures always show a firm texture and I bet those would taste the agar agar/ gelatin. The use of realtender coconut pulp and its water makes a lot of difference than using the canned ones. Wish I can get hold of some tender coconut to try this.
