Vegan Avocado Brownies

  • ¼ cup pureed avocado
  • ¼ cup olive oil
  • ½ cup all purpose floor
  • ½ cup wholewheat flour
  • ½ cup unsweetened cocoa powder
  • ½ cup raw sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup brewed coffee
  • ½ cup semi-sweet chocolate chips (refer notes)
  1. Preheat oven to 180 degrees. Grease and floor a brownie pan (8x8).
  2. Whisk the mashed avocado and olive oil till smooth. Add all the other ingredients except the chocolate chips and fold in till well combined.
  3. Fold in the chocolate chips.
  4. Pour the batter into the prepared pan and bake for around 20 minutes till a skewer comes out clean and the top is firm to touch. Do not overbake.
  5. Allow to cool completely in the pan. Cut and enjoy!
I have used normal chocolate chips into half the batter since mine weren't vegan. I added it for the kids and had the portion which didn't have the chocolate chips.
