Orange Scotch Pancakes

  • 2 oranges
  • Milk, as needed
  • 175 gm all purpose flour
  • 1 tsp baking powder
  • 2 tbsp sugar
  • 1 egg
  1. Grate the zest off the orange.
  2. Juice the oranges and pour into a measuring cup. Pour enough milk to make 200 ml of liquid.
  3. Combine the flour, baking powder, orange zest and sugar in a bowl.
  4. Make a hole in the center. Pour the orange milk and the egg. Combine well.
  5. Brush a pan with some oil and spoon some mixture.
  6. As the bubbles start to appear, flip and cook for a few minutes till done.
  7. Serve as soon as possible with honey, maple syrup or butter.
