Coffee Walnut Mug Cake

  • 20 gm butter, melted
  • 1 tsp instant coffee, diluted in 2 tbsp warm water
  • 1 egg
  • 1 tsp vanilla essence
  • 2 tbsp sugar
  • 4 tbsp all purpose flour
  • A pinch of baking powder
  • A pinch of salt
  • 1 tbsp walnuts, roughly chopped
  • 2 tbsp whipped cream and a walnut, for topping
  1. In a mug, combine the melted butter, egg, diluted coffee, vanilla and sugar till well combined.
  2. Add in the dry ingredients and fold in till all moist.
  3. Microwave for 1 minutes and 30 seconds (mine is a 1000 W microwave). Leave to cool.
  4. Top with the cream and walnut.
Microwave for slightly more time for a less powerful microwave, upto 2 minutes.
