Pomegranate Couscous Salad

  • ½ cup couscous
  • ¾ cup chicken stock
  • 1 pomegranate, deseeded
  • 1 cucumber, diced
  • 6 cherry tomatoes, halved
  • Salt and pepper to taste
  • 1 tbsp olive oil
  1. Boil the chicken stock.
  2. Pour it over the couscous and allow it to rest for five minutes. Fluff it up with a fork.
  3. Add in the remaining ingredients and toss it up.
  4. Serve immediately.
