Jordanian Tomato Rice Soup

  • 25 gm butter
  • 1 small onion, minced
  • 1 large tomato, peeled and chopped
  • ½ tsp tomato paste
  • A small pc cinnamon
  • Salt and pepper to taste
  • 3 tbsp rice, soaked for 30 minutes and drained
  1. Heat butter and saute the onion till soft.
  2. Now add the tomato, paste, cinnamon, salt and pepper along with 1 litre of water. Keep on high flame till the water boils, then keep it on simmer for 30-45 minutes, stirring occasionally.
  3. Now add the rice and stir well. Cook for a further 25-30 minutes on simmer till the rice gets cooked and mashed. Add some water if the soup gets too thick. Adjust on the salt and pepper.
  4. Serve warm and relish!
