Microwave Bread Butter Pudding

  • 6-8 big slices of stale bread
  • 50 gm butter, melted
  • 500 ml milk
  • 2 large eggs
  • 1 tbsp corn flour
  • ¼ cup sugar
  • 1 tsp vanilla extract
  • 2 tbsp brown sugar
  • Toppings of choice - I used 125 gm blueberries and ¼ cup crushed walnuts
  1. In a microwaveable glass dish, cut the bread roughly and spread. Pour the melted butter all over.
  2. Whisk together the ingredients from milk to vanilla and pour uniformly over the bread.
  3. Sprinkle the toppings and the brown sugar.
  4. Microwave for 8-10 minutes and allow it to rest for 5 minutes.
  5. Dig in warm!
My oven is 900W. Do keep a watch on the microwave to avoid it from drying.
