Baingan Bhaji - Bringal Fritters

  • 1 large brinjal, chopped into sticks
  • 1 cup besan flour
  • A pinch of baking soda
  • ¼ tsp red chilli powder
  • ¼ tsp turmeric powder
  • A pinch of asafoetida/ hing
  • ¼ tsp chaat masala powder
  • 2 green chillies, minced
  • 3 tbsp coriander leaves, minced
  • Salt to taste
  • Oil for deep frying
  1. Wash the chopped brinjal well, sprinkle some salt and place in a colander.
  2. Mix the rest of the ingredients except the oil in a bowl. Add the drained brinjal and toss well. Add water in drizzles and mix to make a thick batter.
  3. Heat oil in a kadai till hot enough. Drop spoonfuls into the hot oil and fry till golden brown.
  4. Drain onto a kitchen towel. Serve warm with ketchup.
