Bengali Ghee Bhat | Bengal Ghee Rice

  • 3 cups basmati rice, soaked for 30 minutes and drained
  • ¼ cup ghee
  • 15-20 cashewnuts
  • A handful raisins
  • 3 bay leaf
  • 2 cinnamon stick
  • 3-4 green cardamom
  • 2 black cardamom
  • 4-6 cloves
  • 1 cup frozen mixed vegetables (peas, carrot, beans)
  • 4½ cup water
  • Salt to taste
  1. Heat ghee in a saucepan. Briefly fry the cashewnuts. Plump up the raisins. Drain and reserve.
  2. Into the same ghee, add the whole spices and sizzle. Add the frozen vegetables and saute for a minute.
  3. Add the drained rice and fry for 5-6 minutes. Add the water and salt. Keep the flame on high and allow it to come to a boil.
  4. Keep the flame on minimum and cook till done. Give a stir once in between.
  5. Serve hot with side of choice.
Since the rice is being soaked, I take a ratio of 1½ cup of water for 1 cup rice.
