Vazhuthananga Upperi/ Mezhukupuratti ~ Malabar Eggplant Stir Fry

  • 1 large eggplant
  • 1 tbsp coconut oil
  • ½ tsp mustard seeds
  • 1 sprig curry leaves
  • 2 shallots (pearl onions/ cheriyulli), peeled and chopped
  • 2 green chillies, slit
  • ¼ tsp turmeric powder
  • ¼ tsp red chilli powder
  • ¼ tsp fennel powder
  • Salt to taste
  1. Chop the eggplant into small pieces. It is not necessary to remove the skin. Wash well, sprinkle some salt and keep in a colander till use.
  2. In a saucepan, heat coconut oil. Splutter mustard seeds. Fry the curry leaves.
  3. Add the shallots and green chillies and saute for a minute.
  4. Add the eggplant along with the spice powders and salt and give a good toss.
  5. Cook on low flame, stirring occasionally till wilted and cooked.
  6. Serve hot with rice and curry.
