Light Lemon Curd

  • ⅓ cup fresh lemon juice
  • 1 tsp lemon zest
  • 1 large egg, room temperature
  • ½ tbsp corn flour
  • ¼ cup sugar
  • 25 gm butter
  1. Blend the juice, zest, egg, corn flour and sugar till combined. Pour into a pan and add butter.
  2. Cook on low flame stirring occasionally, till the mixture thickens and coats the back of the spoon.
  3. Allow to cool completely, before storing in a glass jar in the fridge.
