Tiganites ~ Greek Pancakes

  • 2 cups lukewarm water
  • 1 tsp dried yeast
  • 1 cup all purpose flour
  • 1 cup wholwheat flour
  • ½ tsp salt
  • 1 tsp sugar
  • Oil for frying
  • Honey and walnuts to serve
  1. Whisk the yeast into the water and allow to rest for five minutes.
  2. Add in the ingredients from flour to sugar and whisk well till moist. The batter will be thick.
  3. Allow the batter to rest for 15-20 minutes.
  4. Heat a griddle and brush some oil.
  5. Scoop out ⅓ cup batter and drop onto the griddle. Shape into a pancake.
  6. Cook on both the sides till nicely done. These pancakes are thick, so cook till it is done inside.
  7. Repeat with all the batter, makes around 8 pancakes.
  8. Serve warm with honey and walnuts.
You can use all purpose flour completely for this recipe. Using more wholewheat flour, however would make it too dense.
