Simple Quinoa Salad

  • ¼ cup quinoa
  • ¾ cup water
  • 8 cherry tomatoes, halved
  • 1 cucumber, diced
  • 4 tbsp chopped parsley
  • 1 tbsp chopped mint
  • 1 tbsp chopped coriander
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 ripe avocado, peeled and cut into long stripes
  1. Wash the quinoa really well, at least five to six times. Drain and set aside.
  2. Bring the water to boil. Add the quinoa and cook on low flame, till all the water is absorbed and the quinoa looks plumped up. Allow to cool completely.
  3. In a bowl, combine the ingredients from tomato to coriander. Add in the cooled quinoa and toss well.
  4. Sprinkle in the olive oil and seasoning and toss well to coat completely.
  5. Spoon into bowls, Top with avocado strips and serve immediately.
It is best to prepare the quinoa well in advance and keep it in the fridge till it is time to prepare the salad.
