At times, I wish I could keep ranting and ranting… But then I think, that’s not the way we should be taking to life. Life will never be as per how we want it to be. Our loved ones may become distant, the past may keep coming back to haunt us, the ones whom we thought understands us are the ones who turn out to be otherwise… When I start getting frustrated, I tell myself – is it all worth it? The past is not worth living for – it is the present that is worth it, the future that is worth it, InShaAllah. We have made mistakes, changed and evolved into what we have become and we need to continuously evolve to become better human beings. If we prefer to live in the past and cry over it again and again, nobody stands to lose apart from ourselves. All the opportunities that will come and knock at our door will get lost because of it. Allah has promised us that He will never burden us beyond what we can bear,  but that also teaches us to look at our life in totality and be thankful for whatever we have in our life, as there are many others who wish for the type of life we have…. Alhamdulillah, every moment, I keep seeing things that I am forced to repeat the thankfulness to Him. Everytime I feel I am being pushed out, He has given me instances where I thank Him profusely. It just proves the fact that if we see things differently, life will look much rosier… So it all lies in the perspective… 🙂

 

As I check the statistics on the blog (I still don’t want it to be called a site!), this happens to be my 600th recipe post. Seriously, 600 recipes on the blog? I myself cannot believe it… The lazyhead I was at one time who used to hate the kitchen, now wait for every opportunity to try new recipes and Alhamdulillah, most of the attempts are well off in the first try itself and it makes it to the blog, however some do fail – and it is natural! – that they get pushed off to be tried again. I must say that if it was not for all your wonderful readers out there, I would have never made it to this level. InShaAllah, soon the blog will also hit 700 posts in total, so that is another milestone coming up. There are lots and lots of recipes coming up, thanks to my overflowing drafts, and I only sincerely hope that I keep my zest to keep blogging… 🙂

 

Dragon fruit is once-in-a-while purchase for me, if I get to see it at a good price. I have already shared a pudding recipe before with coconut milk, and this time I go the traditional route of making it with milk. This reminds me that I haven’t even shared a normal milk pudding that is so handy for large parties, yet on the blog… It is always like that, we like to make complicated recipes and tend to ignore the easy handy recipes most of the times…. 🙂 Till I do find the occassion to make it and post a recipe for all of you, let me leave you with this exotic pudding that you can make for those special private times… Dragon fruit is supposed to be an exotic fruit in itself, so you can expect this pudding to taste different from other puddings you may have tried….

Dragon Fruit Milk Pudding

A milk pudding with dragon fruit as the star!

Cook Time 2 hours
Total Time 2 hours 10 minutes

Ingredients

  • 1 big dragon fruit
  • 300 ml milk
  • 200 ml condensed milk
  • 150 ml water
  • 10 gm agar agar china grass

Instructions

  • Peel the dragon fruit and cut into peices. Grind into a paste without adding water. Set aside.
  • Soak the agar-agar into the water for 20 minutes. Keep on the flame on low heat till it melts. Do not boil.
  • Whisk the milk, condensed milk and dragon fruit pulp in a saucepan till smooth. Bring the mixture to heat.
  • Add in the melted agar-agar mixture and cook for a few more minutes till all is well combined.
  • Switch off and pour into 6 ramekins. Allow it to come to room temperature.
  • Keep in the refrigerator for another hour before serving cold.

Notes

1. Add sugar if necessary. The dessert is mildly sweet.
2. I served it with a strawberry on top. You could use whipped cream or any topping of your choice.
