After the Fruity Iced Tea, here is the second in line for the summery drinks in this month’s 3 back-to-back series. I don’t think I have to tell how good coconut water is in sweltering heat. It is one of the most electrolyte filled natural drinks that you will find on the face of earth. I am really not a fan of coconut water but of late, I have come to liking its taste. I know it’s strange for someone who loves coconut a lot, but somehow coconut water never appealed to me since childhood!
I must say this drink changed my perception about coconut water altogether. This drink is nothing much than lemon juice spiked up coconut water with plumped up chia seeds floating all over the glass! The drink in itself is a pretty sight to watch, and then with all ingredients that has gone into it, I don’t need to tell you how refreshing and energizing this one is! It is one of the perfect drink that you can have on a scorching summer afternoon. Off to the recipe…
Coconut Water Chia Cooler
Ingredients
- 330 ml can coconut water
- 1 tsp chia seeds
- Juice of one lemon
- Sugar to taste
Instructions
- Combine the ingredients in a glass and give it a good mix.
- Allow it to chill till the chia seeds plump up.
- Drink cold!
