Coming back from vacation and getting back to live blogging is something that many bloggers have an inertia towards. It is normal – as a human being, you have a tendency to lazy around to get back to things that you had left unattended. But if you ask me, I have missed blogging. I had gone home with my laptop and camera in tow, determined to learn a bit of manual clicking and working on a few new facets of blogging. But it all happened otherwise. In fact, this is one of the busiest vacations I have ever had, though if you ask me what did I do, I did nothing much! 😀

 

It started off with B getting hitched. We had a low key yet a relative-filled function. My sister and I instantly hit it off with our new sister-in-law, hehe… Since HD was around for very few days, he made sure to keep me completely occupied. We had a one day trip to Bangalore and then quite a lot of going around in those 10 days he was there. Once he left, I had a quiet 5 days staying at his place, taking things as per its pace. But once I came back home, days were more crazy. We went to Chennai by train and were there for a day and a half. I spent some time with a college bestie and her family, and we took a big round around the city, since we hardly had time to really get to exploring the city. It was a pity that I couldn’t squeeze in time to meet up any blogger – Chennai is like a hub to many food bloggers! – but caught up for some precious minutes with Fareeha at the railway platform while coming back. It was such a pleasure meeting her and devouring some of the goodies she packed up for me. Immediately after 24 hours of reaching home, we hit a road trip to Coorg and Mysore. Those two rain filled days were so much fun. We couldn’t explore much of Coorg but the sights on the road trip was mind blowing. It was really cold there during the night. While moving to Mysore, we were worried about the rains, but it settled by then, only drizzling down in bits and pieces. We reached home early morning the next day, but not before seeing a lone elephant loitering on the roads from the Wayanad forests for almost 15 minutes before it decided to go back. Then shopping, Eid at home after more than 25 years and one by one of us vacating our home back to reality… Where those 25 days went, I really don’t know but I have come back with so many fond memories and a mind feeling really fresh. 🙂

Coming to what I love to do… sharing recipes of course! Today I am sharing a simplified version of the Chilli Chicken recipe I shared sometime back. I saw this recipe in one of my Malayalam cookbooks and the recipe was so apt for the lazy day I was having. I have a bunch who love Chinese food, so I was sure it would work out. This saucy chicken has limited ingredients and the only time it takes is for the chicken to cook! It is that simple… serve it with plain rice or chapathis if you are making it for dinner and you are good to go. You all know how much I love simple recipes so this one fits the bill perfectly.

 

This saucy chicken is just apt to make when you have come back from vacation just like me and are feeling sulky! 😀 Even if you don’t feel like that way, you can still make it. While we go on to the recipe, I am reminded about this super easy chicken mushroom stir fry that I should be making really soon…  Also if you are regular on the blog and wondering if I have already posted a saucy chicken, yes I have but that was the chicken 65 style! 🙂 Off to the recipe…

Chinese Saucy Chicken

Course Chicken

Cook Time 20 minutes

Ingredients

  • 1 kg chicken cut into medium pieces
  • 3 tbsp oil
  • 4 large cloves garlic
  • 3 large onions chopped
  • 3 tbsp soya sauce
  • 4 tbsp tomato ketchup
  • 1 tbsp hot sauce
  • 1 large capsicum chopped
  • Salt and pepper to taste
  • Chopped spring onion for garnish

Instructions

  • Sprinkle the chicken with half the soya sauce and some salt and marinate for 10 minutes.
  • Heat the oil and add the chicken. Cook till the chicken turns white. Drain and set aside.
  • In the same oil, fry the garlic briefly. Add the onion and saute till wilted.
  • Add in the sauces and give a quick stir. Add back the chicken and coat well.
  • Cook on closed lid till the chicken is done.
  • When the chicken is almost getting done, add the capsicum. Add salt and pepper as need.
  • Serve warm garnished with spring onions.

    I like this way of doing chili chicken w/o batter coating. And your pictures are looking so nice:-). your trip narrative made me homesick for India. Am glad you had fun, with the wedding, trips and all..was following it all on FB too.

  4. you need a vacation on your vacation lol, sometimes when we go on vacation all I want to do is just lie in but usually vacations end up more busier right? Chicken looks delicious, I love dishes like this.

  5. Ah! This was a good read! The pace of the back to back events has left me panting while reading… LOL.. so much action! MashaAllah! I love Indo-Chinese food and we just have one lousy restaurant that serves it. I rarely make them home and wonder why! hmmm… looks delicious and as you said a simple and easy one! Glad you could meet Fareeha…
