I would be lying if I say I don’t miss home. I am not a person who calls my parents every single day, mainly because we run out of topics to talk. 😀 My sister calls umma almost every day and asks detail by detail, however B and I are just the opposite. We always talk to the point. There are times when I call umma after a week, and she starts off with a lot of complaints, but I patiently hear them and smile at myself. What do you do when you lose track of time? After coming back from vacation, I have been calling them alternatively every three days, and somehow after the call, my heart sulks. There was a time when I used to stay with my parents. Sometimes I wished for my own privacy. But once they left and we moved on our own, I feel as though I am really not settling. There are always loose ends, there are always incomplete matters. That makes me wonder how perfectly umma used to handle life, keeping everything in tact, making it feel that it’s all so easy, when she is actually straining herself. I wonder how my girls would view me as well in the future. Just tells you how much life is a full circle, it always comes back…. Reminding myself first and all of you of the beautiful Quranic prayer for our parents…

Coming to today’s recipe… with the onus of having to eat limited sweet these days, I am trying to keep myself tied up the maximum I can. Already we are eating sugar in the form of chocolates and even our big mug of coffees almost every day, that I don’t feel like making anything for us as such. 😀 That is when mug cakes come to the rescue. Just apt when you are craving cake, but you don’t want a whole cake nor do you have the patience to bake one! Do check out the microwave cooking section for some ideas! Meanwhile, let’s move on to this Blueberry Mug Muffin, that is so apt for breakfast on the run! Or for an afternoon tea time snack… Just like all mug cakes, it comes together quickly and can be devoured in no time. I always have some frozen blueberries that I throw in when such need arises! I am sorry for the blurred picture – this bake was so good that the girls and I finished it off in no time. 😉 Off to the recipe…

Mug Blueberry Muffin

Prep Time 3 minutes
Cook Time 2 minutes
Total Time 5 minutes

Ingredients

  • 2 tbsp oil
  • 1 medium egg
  • 1 tbsp milk
  • 1 tsp vanilla extract
  • 2 tbsp brown sugar
  • 4 tbsp all purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon powder
  • 3 tbsp blueberries

Instructions

  • Whisk the wet ingredients (oil to vanilla) in a mug.
  • Add in the dry ingredients and fold till all moist. Fold in the blueberries.
  • Microwave for 1 minute and 45 seconds. (Mine is a 1000 W oven)
  • Allow to cool slightly. Dig in.

Notes

Microwave time depends upon the powder of your oven. Cook a little more if you feel it is raw, but not so much that the mug cake may burn. They continue to cook even after when out of the oven.
